Hi Jakub,
If you're looking for deployment on different host operating systems, you can look into the One Identity Docker containers.
If you're looking to install manually (Either Windows Server or Linux), it's up to you, but personally I've used and prefer Windows Server more. Just check to make sure your choice OS is listed as a supported operating system in the System Requirements
