Disable session rescored on specific servers such as test servers.?

Do you mean disable recording for specific systems?

You can add an additional channel policy depending on the Protocol, for example for RDP:
Go to RDP Control  > Channel Policies > Expand the policy you wish to edit (add a Drawing channel and specify the IP of target server in the (To or Target) field and uncheck the box for Record audit trail) then make this channel policy on top of the list then commit to save changes.

The top channel policy in the list would be the restrictive (Recording disabled for specific IPs) and if other IPs are targeted then SPS will skip the first restrictive drawing channel and go to next drawing channel policy in the list where recording is enabled.
